Friday 12th & Saturday 13th February Evening's 
Upon arrival Pre supper Canapés & a glass sparkling rosé 
Velvety Vine tomato & basil soup with heart shaped  
Welsh rare bit cheese croute (v) 
Oaked smoked salmon with Atlantic prawns in Marie rose sauce, buttered granary bread 
Foire grass and chicken liver parfait with toasted butter brioche, 
red wine and balsamic reduction 
Fresh asparagus & wild mushroom risotto, topped with a soft poached hens egg and parmesan crisp (v) 
Main Courses 
Fillet of beef Wellington with shallot and mushroom duxelles in pastry with parma ham & port wine sauce 
Served with green beans and Dauphinoise potatoes 
Trellis of Scottish wild salmon and sea bass served on a lobster sauce a dill herb linguini, broccoli spears 
Hand calved Roast Rump of English lamb, red wine jus, with a celeriac & potato rösti, and a tower of Mediterranean vegetables 
Frying pan flan with Broccoli, brie cheese and sun blush tomatoes, new potatoes and dressed salad (v)  
Pre -dessert 
Champagne sorbet with framboisé laquier 
Choux pastry Swan filled with passion fruit cream,  
chocolate and butterscotch sauces 
Chefs warm butter brioche cabinet pudding,  
crème anglaise and apricot coulis 
Eton Mess Meringue with Belgian chocolate  
dipped strawberries and soft fruit cream
